Culinary walk
This tour will really give you a taste of Bergen. Bergen is a UNESCO city of gastronomy, and we will explore how food, and particularly fish has been of importance to Bergen. We will discover how meals were prepared in the Hanseatic period, where, due to the fire hazard, the Hanseatic merchants were only allowed to prepare food in a separate assembly building, where you also will get to taste something uniquely Norwegian. We end the walk at the bustling Fish Market where you will get a seafood-demonstration and taste some delicious Norwegian fish and seafood.
In our gastronomic tour we are looking for authentic Norwegian traditional food, with a strong touch of Bergen.
The trip includes, in addition to a historical walk, visits to 3 different traditional places with food history.
We stop first at the Fish Market, a bustling life, a rich selection of fish and shellfish and an atmosphere you will hardly experience anywhere else. We tell about this important place and place it well in the story of why fish and fisheries are so important for Bergen and Western Norway.
Now you yourself will get to taste a rich plate with different flavors of fish and shellfish, put together by the fantastic chefs at FisMe.
Our next stop is “Bryggeloftet & Stuene”
Welcome to over 100 years of good occasions and traditions. We are Bergen’s oldest restaurant – run by the same family since the beginning in 1910, located on the Bryggen.
The restaurant Bryggeloftet & Stuene has its roots back to 1910, when the property Bryggen 11 in Bergen was built. Back then, the restaurant on the 1st floor was part of the then hospice at Bryggen. Right from the start, the place has been run by the same family. The brewery on the 1st floor, with a capacity of approx. 90 guests, eventually became a very well-visited eatery. Our guests are naturally marked by people from Bergen, but the location has probably contributed to the fact that so many visitors have always found their way to Bryggestuen. The increasing flow of tourists to Bryggen and Bergen has meant that tourists now make up a large proportion of our guests in the summer season.
Now you will get to taste real “Bergens Fish Soup”, with the day’s catch and fresh vegetables, composed by the house’s own chef
The tour’s last stop is the local bakery, “Godt Brød Floien”.
Godt Brød has roots a long way back in the city of Bergen. The delicious scent of freshly baked organic buns and bread spread between the small mountain houses.
The people of Bergen poured into the streets and into the open door of our first organic bakery. And the rest is history, as they say.
The reception among the people of Bergen was warm and cordial. The quality and knowledge Godt Brød had was precisely what the customers had been missing. Here, it was the bakers themselves who put the dough, kneaded and kneaded each and every product and who themselves stood behind the counter. And that’s how we’ve done it ever since.
Because we carry out real craftsmanship, our bakeries are called bakewerksted. Our food is mainly organic. Made from short-traveled and unashamedly obvious raw materials. Cultivated by friendly farmers who practice organic farming out of love for the earth and us who live here. Freshly baked bread. Heavenly buns. Buttered rolls and baguettes. Coffee. Juice. Breakfast. Lunch. Many choose us based on pure ideology. Most people choose us because of the taste.
Here you will be served a true Bergen tradition “Skillingsbolle” (cinnamon bun) , vaffel with brown cheese or lefse with a cup of freshly brewed coffee.
